Here’s a great raw, vegan Halloween treat from @chefambermarie:
"Greetings friends! I’m a vegan chef and nutrition educator. I almost always abstain from processed sweeteners for health reasons, but please feel free to substitute Grade B maple syrup for the stevia. If you have more serious peanut issues, feel free to substitute sunflower seed butter for a yummy alternative.
Almost Reese’s Peanut Butter Cups* (Makes about 8)
You Will Need:
Muffin papers & tin 1 cup Thai young coconut meat 1-2 cups almond milk 1/4 cup peanut butter 1/4 cup peanut powder 1/4 cup raw Cacao powder 2.5 tablespoons vanilla 1.5 teaspoons sea salt 1/8 cup melted Cacao butter (optional) Stevia to taste
What To Do With
It In food processor or Vitamix, combine coconut meat with just enough almond milk to get it smooth. The amount of liquid needed will vary depending on how young your young coconut was. Remove half of mixture and set aside.
Add peanut butter, peanut powder, 1 teaspoon of vanilla, and 1 teaspoon sea salt - blend well. Add stevia to taste, blend, and transfer to small bowl. Return remaining coconut mixture to clean machine.
Add Cacao powder, splash of almond milk, remaining vanilla and sea salt, and Cacao butter (if using) - blend well. Add stevia to taste, blend, and transfer to small bowl. The chocolate should be thinner than the peanut mixture, but both should be fairly thick.
Place muffin cups in tins. (If either mixture resists the following process, add slightly more almond milk in order to facilitate spreading. The top coating of chocolate is most important to get smooth.) Coat bottom and sides halfway with thick layer of chocolate and place in freezer to firm up for a few minutes.
Fill cups evenly with peanut mixture up to the level of the chocolate and freeze again. Top each with a layer of chocolate and freeze again. Transfer to fridge after half hour if you opted for Cacao butter. When ready to serve, remove from papers, allow a couple of minutes to warm a bit, and treat yourself!”
